Located within the Shamtota Hills, Amalaya is a famous culinary establishment complete with its own winery, one that is unique in allowing visitors to create their own wine. A vineyard is located not far from the estate, yielding both red and green grapes to press for the wine. A grand, white building with frontal sandstone walkways along a mosaic-floored pool, the Amalaya houses a beautiful garden with unique flowers that add flavour to any concoction. With its periwinkle lilies, amaryllis flowers, colourful orchids, and an assortment of other floral rarities, the Amalaya assures that its customers will have no problem coming up with a taste that suits their palate. Bakios, the winemaster of Amalaya, resides within the juicing room, awaiting visitors. Located next door, in the winery’s machine room, a wooden rack holds a variety of spices to add a special kick to prepared drinks. These include cinnamon, vanilla, lemon, honeycomb, almonds, and nutmeg. Finally, with a chandeliered dining room that offers a view of the surrounding valley, the Amalaya is a magnificent place to enjoy a meal. Oinodes, the bread merchant, sells foodstuffs and beverages unique to the restaurant, including the famed Amalayan Rose red wine.

A lovely orchard can be found close by the winery, with fruit aplenty. The fruit from this orchard can be picked and used in personalised wine recipes. Visitors may choose from a selection of apples, plums, cherries, strawberries, raspberries, blackberries, oranges, lemons, and peaches to give their wine full-flavoured body.
